Orange Refrigerator Cake



This is SO simple and such a hit!




Orange Refrigerator Cake

1 box Duncan Hine white cake mix
1 box orange flavoured gelatin
2-8oz jars Tasty Orange Curd
4 eggs, slightly beaten
1 Tbls lemon juice
1-8oz pkg + 1-3oz pkg cream cheese, softened
1/4 cup butter, softened
1Tbls orange flavoured gelatin
1tsp orange flavouring
5 cups confectioner's sugar
red & yellow food colouring

Preheat oven to 350 degrees. Butter and flour a 15x10 jelly roll pan. Combine cake mix plus next four ingredients and beat two minutes on high speed with mixer. Adjust colour with food colouring until satisfied, 1 or 2 drops at a time. Pour into jelly roll pan, spread evenly, bake for 20-25 minutes, until toothpick inserted in center comes out clean.

Cool completely in pan, on wire rack.

Meanwhile, beat cream cheese, butter, gelatin and flavouring until smooth. Add in confectioner's sugar 1 cup at a time until frosting is a thick, spreadable consistency. Spread evenly onto completely cooled cake, making sure to seal edges of pan so no cake is exposed to air. Do not cover, refrigerate 4 hours or overnight, until completely chilled. Cut into 2x2 inch slices and serve chilled. Cover with plastic wrap after cutting to prevent cake from drying out.
